3 delicious salad dressings

If you think you can’t be bothered to make your own salad dressing please think again! I don’t weigh or measure anything – I just stick to a couple of principles which I’ve outlined here – and I always enjoy delicious dressings. Starting with the mustard and adding the oil slowly will give you a lovely thick, emulsified dressing, but you can just throw it all in a jar and shake! Normally I just keep going till it tastes right, but I’ve given you some ideas of quantities and ingredients to get you started, and I hope you experiment after that.

The method is the same with all these dressings…

2. Gradually stir or whisk in the oil
3. Add the acid – lemon juice/vinegar etc
4. Add any other ingredients
5. Add seasoning to taste

Classic French Dressing
1 heaped tsp Dijon Mustard
4 tbsp olive or rapeseed oil
1 ½ tbsp wine vinegar
Salt and pepper

Honey and Mustard Dressing
2 heaped tsp Grainy Mustard
4 tbsp olive or rapeseed oil
1 ½ tbsp wine vinegar
1 clove garlic crushed
1 tbsp runny honey
Salt and pepper

Lemon and Herb Vinaigrette
1 tsp Dijon Mustard
4 tbsp lemon juice
Zest of 1 lemon
4 tbsp extra virgin olive oil
1 clove garlic
1 tbsp chopped fresh herbs (choose from chives, parsley, basil, coriander, mint or a mixture)
Salt and pepper
